Creamy, dairy-free dressing with pomegranate ginger shot atop a roasted kabocha squash salad.
- 1 container Tulua pomegranate ginger shot
- 1/3 cup olive oil
- 1/4 cup red wine vinegar
- 2 cloves garlic
- 1 Tbsp Dijon/brown mustard
- 1/8 cup almonds (no skins) or cashews
- salt and pepper to taste
