Cacao Avocado Pudding
Delicious, decadent, and healthy cacao avocado pudding with coconut milk, maple syrup, gelatin, and vanilla extract.

- 2 avocados large, ripe
- 1/4 cup maple syrup
- 2 tsp gelatin powder
- 1/4 tsp vanilla extract
- 4 Tbsp cacao powder
- 1/3 cup full-fat coconut milk
- 1/8 tsp Himalayan pink salt (or regular salt)
- 1/2 cup fresh raspberries
- 2 Tbsp shredded coconut
Combine all ingredients in a food processor or blender.
Portion out into ramekins and let chill for ~1 hour.
Top with raspberries, coconut, and a sprinkle of pink salt.
