Cacao Avocado Pudding

Delicious, decadent, and healthy cacao avocado pudding with coconut milk, maple syrup, gelatin, and vanilla extract.

Ingredients
  

  • 2 avocados large, ripe
  • 1/4 cup maple syrup
  • 2 tsp gelatin powder
  • 1/4 tsp vanilla extract
  • 4 Tbsp cacao powder
  • 1/3 cup full-fat coconut milk
  • 1/8 tsp Himalayan pink salt (or regular salt)
  • 1/2 cup fresh raspberries
  • 2 Tbsp shredded coconut

Instructions
 

  • Combine all ingredients in a food processor or blender.
  • Portion out into ramekins and let chill for ~1 hour. 
  • Top with raspberries, coconut, and a sprinkle of pink salt.
